  2. Chop bell peppers, carrots, broccoli, red cabbage, cherry tomatoes, and avocado.
  3. In a large pan, heat olive oil over medium heat.
  4. Add bell peppers, carrots, broccoli, and red cabbage. Stir-fry for 5 minutes.
  5. Add corn and cherry tomatoes. Stir-fry for another 3 minutes.
  6. Squeeze lemon juice over the vegetables and season with salt and black pepper.
  7. Serve the stir-fried vegetables over cooked quinoa.
  8. Garnish with avocado slices.
