Cook quinoa according to package instructions. Set aside.

Heat olive oil in a large pan over medium heat. Add garlic and sauté for 1 minute.

Add spinach and cook until wilted, about 2-3 minutes.

Add cooked quinoa, walnuts, soy sauce, sesame oil, salt, and black pepper. Stir fry for 2-3 minutes.
