Rinse quinoa in a fine-mesh sieve under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add quinoa and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes.

Meanwhile, chop cucumber, cherry tomatoes, red bell pepper, red onion, parsley, and mint.

In a large bowl, combine cooked quinoa, chopped vegetables, parsley, mint, lemon juice, olive oil, salt, and black pepper. Mix well.
