Preheat the oven to 400°F (200°C).

Cut the squash into cubes and place them on a baking sheet. Drizzle with olive oil, balsamic vinegar, maple syrup, salt, and black pepper. Toss to coat evenly.

Roast in the preheated oven for 25-30 minutes, or until the squash is tender and caramelized.

Meanwhile, core and dice the apples.

In a small saucepan, heat a tablespoon of olive oil over medium heat. Add the diced apples and cook until softened, about 5 minutes.

Remove the roasted squash from the oven and let it rest for 5 minutes.

Serve the roasted squash with the cooked apples on top. Garnish with fresh parsley.
