Quinoa Pilau
Quinoa is actually a seed, not a grain, and it is considered a complete protein source.

Rinse the quinoa under cold water.

In a saucepan, heat olive oil and sauté onion and garlic until translucent.

Add carrots and cook for 2 minutes.

Add quinoa, vegetable broth, turmeric, cumin powder, salt, and black pepper. Bring to a boil.

Reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.

Stir in peas and cook for an additional 2 minutes.

Remove from heat and let it rest for 5 minutes.

Fluff the quinoa with a fork and stir in cilantro and lemon juice.
