  1. In a pan, dry roast cumin seeds, coriander seeds, black peppercorns, cloves, cinnamon stick, cardamom pods, bay leaf, nutmeg, mace, fennel seeds, and dried red chilies for 2 minutes.
  2. Allow the spices to cool, then grind them into a fine powder.
  3. In a bowl, mix the ground spices with turmeric powder, ginger powder, garlic powder, cumin powder, and coriander powder.
  4. Heat oil in a pan and add the spice mixture. Cook for 2 minutes.
  5. Add your choice of vegetables or protein and cook until done.
  6. Serve hot with rice or bread.
