Cook quinoa according to package instructions.

In a large bowl, combine cooked quinoa, lentil sprouts, arugula, cherry tomatoes, cucumber, and red onion.

In a small bowl, whisk together lemon juice, olive oil, Dijon mustard, garlic, salt, and black pepper to make the dressing.

Drizzle the dressing over the salad and toss to combine.
