In a mixing bowl, combine quinoa flour, tapioca flour, salt, and baking powder.

Gradually add water and olive oil to the dry ingredients, mixing until a dough forms.

Knead the dough for a few minutes until smooth.

Divide the dough into 8 equal portions and roll each portion into a ball.

Place a dough ball between two sheets of parchment paper and roll it out into a thin circle.

Heat a non-stick pan over medium heat and cook each tortilla for about 1 minute on each side, or until lightly browned.

Repeat with the remaining dough balls.
