Rinse the quinoa under cold water. In a saucepan, bring 2 cups of water to a boil and add the rinsed quinoa. Reduce heat, cover, and simmer for 15 minutes until the quinoa is tender and the water is absorbed.

While the quinoa is cooking, peel and grate the carrot. Dice the cucumber, red bell pepper, and red onion.

In a large bowl, combine the cooked quinoa, grated carrot, diced cucumber, red bell pepper, red onion, fresh parsley, and fresh mint leaves.

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss to combine.

Serve the quinoa and carrot salad chilled or at room temperature. Enjoy!
