  1. Boil the arbi (taro root) until tender. Peel and cut into bite-sized pieces.
  2. Heat oil in a pan and fry the arbi until golden brown. Remove and set aside.
  3. In the same pan, add more oil if needed and sauté the onions until golden.
  4. Add ginger, garlic, and green chili. Sauté for a minute.
  5. Add tomatoes and cook until they turn soft.
  6. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.
  7. Cook the masala for a few minutes until the oil separates.
  8. Add the fried arbi and mix well with the masala.
  9. Cover and cook for 5-7 minutes on low heat.
  10. Sprinkle garam masala and garnish with fresh coriander leaves.
  11. Serve hot with roti or rice.
