Boil the potatoes until tender, then peel and mash them.

In a mixing bowl, combine the mashed potatoes, whole wheat flour, chopped onion, green chilies, coriander leaves, grated ginger, cumin powder, red chili powder, turmeric powder, and salt. Mix well to form a dough.

Divide the dough into equal-sized balls and roll each ball into a flat circle.

Heat a pan over medium heat and cook each paratha with ghee or oil until golden brown on both sides.
