Pondicherry Lentils, also known as Pondicherry Sambar, is a popular South Indian dish that originated in the French colonial town of Pondicherry.

  1. Rinse the lentils and soak them in water for 30 minutes.
  2. In a pressure cooker, heat oil and sauté onions until golden brown.
  3. Add garlic and ginger, and cook for a minute.
  4. Add tomatoes and cook until they turn mushy.
  5. Add turmeric powder, cumin powder, coriander powder, garam masala, and salt. Mix well.
  6. Drain the soaked lentils and add them to the pressure cooker.
  7. Add water and pressure cook for 3-4 whistles.
  8. Let the pressure release naturally.
  9. Garnish with fresh coriander leaves and lemon juice.
  10. Serve hot with rice or bread.
