  5. Reduce heat and simmer for about 20 minutes until the plantains are fully cooked.
  6. Using an immersion blender, blend the soup until smooth.
  7. Stir in the coconut milk, salt, and black pepper.
  8. Simmer for another 5 minutes.
  9. Remove from heat and let it rest for 10 minutes.
  10. Serve hot, garnished with fresh cilantro and a squeeze of lime juice.
