  1. Peel and cut the plantains into small cubes.

  5. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 20 minutes.
  6. Use an immersion blender or a regular blender to puree the soup until smooth.
  7. Stir in the coconut milk, ground black pepper, and salt. Simmer for another 5 minutes.
