Peel and cut the plantains into small cubes.

Crush the garlic cloves and finely chop the onion.

Heat olive oil in a large pot and sauté the garlic and onion until golden brown.

Add the plantain cubes and cook for 5 minutes, stirring occasionally.

Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 20 minutes.

Use an immersion blender or a regular blender to puree the soup until smooth.

Stir in the coconut milk, ground black pepper, and salt. Simmer for another 5 minutes.

Remove from heat and let the soup rest for 5 minutes.
