Pineapple Sweet Potato Bake

Peel and slice the sweet potatoes into 1/4-inch thick rounds.

In a large bowl, combine the sweet potato slices, pineapple chunks, maple syrup, coconut oil, cinnamon, nutmeg, and salt. Toss until well coated.

Transfer the mixture to a greased baking dish.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and sprinkle the chopped pecans over the top.

Bake uncovered for an additional 15 minutes, or until the sweet potatoes are tender and the pecans are golden brown.
