In a saucepan, heat olive oil over medium heat. Add the onion, carrot, and garlic, and sauté until softened.

Add the couscous and stir to coat with the oil. Cook for 1-2 minutes.

Add the vegetable broth, raisins, almonds, cumin, cinnamon, salt, and black pepper. Bring to a boil.

Reduce heat to low, cover, and simmer for 10 minutes or until the couscous is tender and the liquid is absorbed.

Remove from heat and let it rest for 5 minutes.

Fluff the couscous with a fork and garnish with fresh parsley before serving.
