  1. Preheat the oven to 350°F. Grease a baking sheet and set aside.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, and mix well.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Fold in the persimmons, raisins, and chopped walnuts.
  7. Drop rounded spoonfuls of dough onto the prepared baking sheet.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. Serve and enjoy!
