Pear Frangipane Tart (Vegan)
Frangipane is a sweet almond filling used in French pastry, named after the Italian nobleman Marquis Muzio Frangipani.

In a food processor, combine all-purpose flour, almond flour, coconut sugar, salt, and vegan butter. Pulse until crumbly. Add cold water and pulse until the dough comes together.

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C).

On a lightly floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan and trim off any excess.

In a bowl, toss the pears with lemon juice. Arrange the pears on top of the tart crust.

In a separate bowl, combine almond flour, coconut sugar, vanilla extract, and almond extract. Sprinkle the mixture over the pears.

Bake for 35-40 minutes, or until the crust is golden brown and the pears are tender.

Allow the tart to cool for 30 minutes before serving.
