In a large bowl, combine peanut butter, honey, oats, and vanilla extract. Mix well until all ingredients are evenly incorporated.

Add chocolate chips, chopped nuts, and shredded coconut to the mixture. Stir until they are evenly distributed.

Line a baking dish with parchment paper. Press the mixture firmly into the dish.

Refrigerate for at least 1 hour to allow the treats to set.
