Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, mix together the peanut butter, maple syrup, and vanilla extract until well combined.

Add the rolled oats, ground flaxseed, baking powder, and salt to the bowl. Stir until all the ingredients are evenly incorporated.

Fold in the chocolate chips.

Using a cookie scoop or spoon, drop rounded tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Flatten each cookie slightly with the back of a spoon.

Bake for 10-12 minutes, or until the edges are golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.

Transfer the cookies to a wire rack to cool completely.
