Pattypan squash gets its name from its resemblance to a small flying saucer or pattypan.

Grate the pattypan squash and squeeze out any excess moisture.

In a large bowl, combine the grated squash, flour, baking powder, salt, and black pepper.

In a separate bowl, whisk together the egg and milk. Add the egg mixture to the squash mixture and stir until well combined.

Stir in the chopped green onions.

Heat the vegetable oil in a large skillet over medium heat.

Drop spoonfuls of the squash mixture into the hot oil and flatten slightly with the back of the spoon.

Cook for 2-3 minutes on each side, until golden brown.

Remove the fritters from the skillet and drain on paper towels.
