Parsnips are a root vegetable closely related to carrots and parsley.

Peel and chop the parsnips, onion, and garlic.

Heat olive oil in a large pot and sauté the onion and garlic until softened.

Add the parsnips and vegetable broth to the pot, bring to a boil, then reduce heat and simmer for 20 minutes or until parsnips are tender.

Using an immersion blender or regular blender, puree the soup until smooth.

Stir in the coconut milk and season with salt and black pepper.

Simmer for an additional 5 minutes.
