Cut the bell peppers, zucchini, and red onion into bite-sized pieces.

In a large bowl, combine the chopped vegetables, cherry tomatoes, balsamic vinegar, olive oil, salt, and black pepper. Toss well to coat the vegetables evenly.

Spread the vegetables on a baking sheet in a single layer.

Roast in the preheated oven for 20 minutes or until the vegetables are tender and slightly caramelized.
