  5. Remove the pot from the heat and let it rest for 10 minutes.
  6. Use an immersion blender or a food processor to blend the soup until smooth.
  7. Return the soup to the heat and season with salt and black pepper.
  8. Serve hot, garnished with fresh basil leaves and a drizzle of extra virgin olive oil.
