Heat cooking oil in a large pan over medium heat.

Add chopped onion and sauté until translucent.

Add minced garlic and grated ginger, and cook for another minute.

Stir in curry powder, turmeric powder, cumin powder, coriander powder, salt, and black pepper.

Add diced red bell pepper, sliced carrot, diced potato, cauliflower florets, and green peas. Mix well.

Pour in coconut milk and vegetable broth. Bring to a simmer and cook for 20-25 minutes, or until the vegetables are tender.

Serve the curry over cooked rice and garnish with fresh cilantro. Enjoy!
