Broad beans, also known as fava beans, are one of the oldest cultivated crops and have been enjoyed in various cuisines for thousands of years.

  1. Preheat the oven to 200°C (400°F).
  2. Toss the cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Place them on a baking sheet and roast for 15 minutes.
  3. Meanwhile, bring a pot of salted water to a boil. Add the broad beans and cook for 3 minutes. Drain and rinse with cold water.
  4. Trim the woody ends of the asparagus and blanch them in boiling water for 2 minutes. Drain and rinse with cold water.
  5. In a large bowl, combine the roasted cherry tomatoes, broad beans, asparagus, mixed salad leaves, and sliced red onion.
  6. In a small bowl, whisk together the lemon juice, remaining olive oil, salt, and pepper. Pour the dressing over the salad and toss gently.
  7. Let the salad rest for 5 minutes to allow the flavors to meld. Serve and enjoy!
