Broad beans, also known as fava beans, are one of the oldest cultivated crops and have been enjoyed in various cuisines for thousands of years.

Preheat the oven to 200°C (400°F).

Toss the cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Place them on a baking sheet and roast for 15 minutes.

Meanwhile, bring a pot of salted water to a boil. Add the broad beans and cook for 3 minutes. Drain and rinse with cold water.

Trim the woody ends of the asparagus and blanch them in boiling water for 2 minutes. Drain and rinse with cold water.

In a large bowl, combine the roasted cherry tomatoes, broad beans, asparagus, mixed salad leaves, and sliced red onion.

In a small bowl, whisk together the lemon juice, remaining olive oil, salt, and pepper. Pour the dressing over the salad and toss gently.

Let the salad rest for 5 minutes to allow the flavors to meld. Serve and enjoy!
