  1. Boil the potatoes until tender, then peel and mash them.
  2. Heat olive oil in a pan and sauté the onion, garlic, and ginger until golden brown.
  3. Add the peas and spices (turmeric powder, cumin powder, coriander powder, garam masala powder, chili powder, and salt). Cook for a few minutes.
  4. Add the mashed potatoes, lemon juice, and fresh coriander leaves. Mix well and let the filling cool.
  5. Preheat the oven to 200°C (400°F).
  6. Cut each spring roll wrapper into half to form rectangles.
  7. Take one rectangle and fold it into a cone shape, sealing the edges with water.
  8. Fill the cone with the potato and pea filling, then seal the top edge with water.
  9. Repeat with the remaining wrappers and filling.
  10. Place the samosas on a baking tray lined with parchment paper.
  11. Brush the samosas with olive oil.
  12. Bake for 15-20 minutes, or until golden brown.
  13. Let the samosas rest for 10 minutes before serving.
  14. Serve hot with chutney or dipping sauce of your choice.
