  2. Peel and dice the sweet potatoes into bite-sized cubes.
  3. In a bowl, combine the diced sweet potatoes, olive oil, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
  4. Spread the sweet potatoes on a baking sheet and roast in the preheated oven for 20-25 minutes, or until they are tender and slightly crispy.
  5. While the sweet potatoes are roasting, zest the orange and squeeze out the juice.
