Preheat the oven to 200°C (400°F).

Peel and dice the sweet potatoes into bite-sized cubes.

In a bowl, combine the diced sweet potatoes, olive oil, salt, and black pepper. Toss until the sweet potatoes are evenly coated.

Spread the sweet potatoes on a baking sheet and roast in the preheated oven for 20-25 minutes, or until they are tender and slightly crispy.

While the sweet potatoes are roasting, zest the orange and squeeze out the juice.

In a small bowl, whisk together the orange zest, orange juice, grated ginger, honey, and a pinch of salt.

Once the sweet potatoes are done, remove them from the oven and let them cool for 10 minutes.

In a serving bowl, combine the roasted sweet potatoes and the orange ginger dressing. Toss gently to coat.
