  1. Rinse the basmati rice under cold water until the water runs clear.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add sliced onions and sauté until golden brown.
  4. Add the rinsed rice to the skillet and stir well to coat the grains with oil.
  5. Pour in vegetable stock and season with salt and black pepper.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
  7. Remove from heat and let it rest for 5 minutes.
  8. Fluff the rice with a fork and garnish with chopped parsley before serving.
