Heat oil in a pan.

Add thinly sliced onions, chopped tomatoes, diced green chillies, grated ginger, and crushed garlic cloves to the pan.

Saute until the onions turn golden brown.

Add tamarind pulp, salt, and water as required. Cook until the mixture thickens.

Allow the mixture to cool.

Transfer the mixture to a blender and blend until smooth.

Serve the onion chutney with dosa, idli, or any other Indian dish.
