  1. Cut the okra into small pieces and slice the tomatoes.
  2. Press the tofu to remove excess water and cut into cubes.
  3. Finely chop the red onion and mince the garlic.
  4. Heat olive oil in a pan and stir-fry the tofu until golden.
  5. Remove the tofu from the pan and set aside.
  6. In the same pan, sauté the red onion and garlic until softened.
  7. Add the okra and cook for 5 minutes, until tender.
  8. Add the tomatoes, lemon juice, salt, and black pepper. Cook for another 2 minutes.
  9. Remove from heat and let cool slightly.
  10. In a large bowl, combine the cooked vegetables, tofu, and fresh cilantro.
  11. Toss gently to mix everything together.
  12. Serve the okra and tomato tofu salad chilled or at room temperature.
