  2. In a large bowl, combine the carrots, whole wheat flour, almond flour, ground flaxseed, baking powder, ground cinnamon, ground ginger, and salt.
  3. In a separate bowl, mix together the unsweetened applesauce, almond milk, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Transfer the batter into the greased loaf pan and smooth the top.
  6. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
