  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, combine the flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, mix together the walnuts, almonds, pecans, dried cranberries, dried apricots, dried cherries, dates, bananas, applesauce, maple syrup, coconut oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix well.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it cool in the pan for 10 minutes.
  8. Transfer the fruitcake to a wire rack and let it cool completely.
  9. Once cooled, slice and serve.
