Rinse and soak the navy beans overnight.

In a large pot, heat olive oil over medium heat.

Add chopped onion, carrot, celery, and garlic. Cook until softened.

Drain and rinse the soaked beans, then add them to the pot.

Add canned tomatoes, vegetable stock, bay leaf, thyme, salt, and black pepper.

Bring to a boil, then reduce heat and simmer for 30 minutes or until beans are tender.

Remove bay leaf and adjust seasoning if needed.

Serve hot, garnished with fresh parsley.
