  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. Grate the zucchini and squeeze out the excess moisture.
  3. In a large bowl, whisk together the whole wheat flour, almond flour, baking powder, cinnamon, nutmeg, and salt.
  4. In a separate bowl, beat the eggs. Add the maple syrup, coconut oil, and vanilla extract. Mix well.
  5. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the grated zucchini, chopped walnuts, and raisins.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
