Mapo Tofu is a popular Szechuan dish known for its spicy and numbing flavor, thanks to the Szechuan peppercorns. It is believed to have been created by a woman with a pockmarked face, hence the name ‘Mapo’, which means ‘pockmarked grandma’ in Chinese.

  1. Cut the tofu into small cubes and set aside.
  2. Heat a wok or large skillet over medium heat and add the Szechuan peppercorns. Toast them for about 1 minute until fragrant, then remove and crush them.
  3. Add the ground beef to the wok and cook until browned. Remove the beef and set aside.
  4. In the same wok, add the garlic, ginger, and chili bean paste. Stir-fry for about 1 minute.
  5. Add the fermented black beans, soy sauce, and sesame oil. Stir-fry for another minute.
  6. Return the beef to the wok and add the tofu. Stir gently to combine.
  7. In a small bowl, mix the cornstarch with water to make a slurry. Add the slurry to the wok and stir gently.
  8. Cook for about 5 minutes until the sauce thickens.
  9. Garnish with chopped green onions and serve hot with steamed rice.
