Wild rice is not actually rice, but rather the seed of an aquatic grass native to North America.

This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

  1. Rinse the wild rice under cold water.
  2. In a large saucepan, bring the vegetable broth to a boil.
  3. Add the wild rice to the boiling broth and reduce the heat to low. Cover and simmer for 30 minutes or until the rice is tender.
  4. In a separate bowl, combine the dried cranberries, pecans, green onions, and parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  6. Once the rice is cooked, remove it from the heat and let it rest for 5 minutes.
  7. Fluff the rice with a fork and transfer it to the bowl with the cranberry mixture.
  8. Pour the dressing over the rice and toss gently to combine.
  9. Serve warm or at room temperature.
