Heat 1 tablespoon of olive oil in a pan over medium heat.

Add chopped onion and garlic cloves to the pan and sauté until translucent.

Add button mushrooms and continue cooking until they release their moisture and become tender.

Remove the pan from heat and let the mixture cool slightly.

In a food processor, combine the mushroom mixture, cashew nuts, lemon juice, fresh parsley, salt, and black pepper. Process until smooth.

Transfer the pate to a serving dish and refrigerate for at least 30 minutes.
