  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring the vegetable broth to a boil and add the quinoa. Cook for 15 minutes or until the quinoa is tender and the liquid is absorbed.
  3. In a separate pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.
  4. Add the mushrooms and cook until they release their moisture and start to brown.
  5. Stir in the cooked quinoa and fresh herbs. Season with salt and black pepper.
  6. Cook for another 5 minutes, stirring occasionally.
  7. Remove from heat and let it rest for 5 minutes before serving.
  8. Serve hot and enjoy!
