Soak the black beans overnight in water. Drain and rinse.

In a large pot, heat olive oil over medium heat. Add chopped onion, bell pepper, and minced garlic. Cook until softened.

Add the soaked black beans, bay leaf, cumin, oregano, salt, and black pepper to the pot. Stir well.

Add enough water to cover the beans by about 2 inches. Bring to a boil, then reduce heat and simmer for about 1 hour or until the beans are tender.

While the beans are cooking, prepare the white rice according to package instructions.

Once the beans are cooked, remove the bay leaf and season with additional salt and pepper if needed.

Serve the munyeta over white rice and enjoy!
