Mounds Haystacks are inspired by the popular Mounds candy bar, which is known for its combination of coconut and chocolate.

  1. In a large bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and salt.
  2. Mix well until all ingredients are evenly combined.
  3. Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  4. Place the haystacks in the refrigerator and let them rest for at least 1 hour.
  5. In a microwave-safe bowl, melt the chocolate chips and vegetable shortening in 30-second intervals, stirring in between, until smooth.
  6. Dip the bottom of each haystack into the melted chocolate mixture and return to the parchment paper.
  7. Drizzle any remaining chocolate over the haystacks.
  8. Place the haystacks back in the refrigerator for another 30 minutes to allow the chocolate to set.
  9. Serve and enjoy!
