In a large saucepan, heat olive oil over medium heat. Add onion, carrot, and garlic. Cook until softened, about 5 minutes.

Add ground cumin, ground coriander, and ground cinnamon. Stir well to coat the vegetables.

Add vegetable broth and bring to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 10 minutes.

Fluff the couscous with a fork. Stir in chickpeas, raisins, fresh cilantro, fresh mint leaves, lemon juice, salt, and black pepper.
