Heat oil in a pot and sauté onions, garlic, and ginger.

Add turmeric powder, cumin powder, and coriander powder. Stir well.

Add carrots, potatoes, and vegetable broth. Bring to a boil and simmer until vegetables are tender.

Blend the soup until smooth using a blender or immersion blender.

Return the soup to the pot and stir in coconut milk, lime juice, salt, and black pepper.
