Traditionally, Pate de Foie Gras is made from the liver of a duck or goose, but this vegan version uses cashews and mushrooms to mimic the creamy texture and rich flavor.

  1. In a pan, heat olive oil and sauté onion and garlic until softened. Add mushrooms and cook until they release their liquid.
  2. Remove from heat and let it cool.
  3. In a food processor, add cashews, nutritional yeast, tamari or soy sauce, apple cider vinegar, salt, pepper, and fresh herbs.
  4. Add the mushroom mixture and blend until smooth.
  5. Transfer the mixture to a bowl and refrigerate for at least 1 hour to firm up.
  6. Serve chilled with toast or crackers.
