Mock Pate de Foie Gras
Traditionally, Pate de Foie Gras is made from the liver of a duck or goose, but this vegan version uses cashews and mushrooms to mimic the creamy texture and rich flavor.

In a pan, heat olive oil and sauté onion and garlic until softened. Add mushrooms and cook until they release their liquid.

Remove from heat and let it cool.

In a food processor, add cashews, nutritional yeast, tamari or soy sauce, apple cider vinegar, salt, pepper, and fresh herbs.

Add the mushroom mixture and blend until smooth.

Transfer the mixture to a bowl and refrigerate for at least 1 hour to firm up.

Serve chilled with toast or crackers.
