Quinoa and bulgur are ancient grains that have been consumed for thousands of years. They are rich in nutrients and provide a good source of plant-based protein.

Cook the quinoa and bulgur according to package instructions.

Drain and rinse the chickpeas.

Chop the cucumber, tomato, red onion, parsley, and mint.

In a large bowl, combine the cooked quinoa, bulgur, chickpeas, chopped vegetables, parsley, and mint.

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.

Pour the dressing over the salad and toss to combine.

Let the salad rest for 10 minutes to allow the flavors to meld.
