  1. Preheat the broiler. Place the pimento peppers on a baking sheet and broil until the skin is charred, turning occasionally. Remove from the broiler and let cool.
  2. Once cooled, remove the skin, seeds, and stems from the pimento peppers. Chop them into small pieces.
  3. Finely chop the red onion and garlic cloves.
  4. In a bowl, combine the chopped pimento peppers, red onion, garlic, smoked paprika, ground cumin, apple cider vinegar, olive oil, salt, and black pepper. Mix well.
