Chickpeas are a great source of plant-based protein and have been a staple in Middle Eastern cuisine for centuries.

Rinse and drain the chickpeas.

In a large pot, heat olive oil over medium heat.

Add chopped onion and minced garlic cloves, sauté until golden brown.

Add grated carrots and cook for 5 minutes.

Stir in tomato paste, ground cumin, ground coriander, and turmeric powder.

Add basmati rice and vegetable stock, bring to a boil.

Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.

Stir in chickpeas, lemon juice, fresh cilantro, salt, and black pepper.

Simmer for another 10 minutes.

Remove from heat and let it rest for 10 minutes.
