Microwave – Spaghetti Squash, Small Hubbard Squash
Spaghetti squash gets its name from its unique stringy flesh, which resembles spaghetti noodles when cooked.
This is vegan and gluten free recipe. Dish can be prepared in 35 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 7.

Cut the spaghetti squash and small hubbard squash in half lengthwise. Scoop out the seeds.

Place the spaghetti squash halves cut-side down in a microwave-safe dish. Add a little water to the dish.

Microwave on high for 10-12 minutes, or until the squash is tender.

While the spaghetti squash is cooking, place the small hubbard squash halves cut-side down in a separate microwave-safe dish. Add a little water.

Microwave on high for 8-10 minutes, or until the squash is tender.

Remove the cooked squash from the microwave and let it rest for 5 minutes.

Use a fork to scrape the flesh of the spaghetti squash into strands.

In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant.

Add the spaghetti squash strands and small hubbard squash flesh to the skillet. Season with salt and black pepper.

Cook for 2-3 minutes, stirring occasionally.

Remove from heat and garnish with fresh basil.

Serve hot.
