Peel and cut the potatoes into small cubes.

Heat oil in a pan and add cumin seeds.

Once the cumin seeds splutter, add turmeric powder, red chili powder, coriander powder, and amchur powder. Mix well.

Add the cubed potatoes to the pan and mix until they are coated with the spice mixture.

Cook on medium heat, stirring occasionally, until the potatoes are crispy and golden brown.

Sprinkle salt and garnish with fresh coriander leaves.
