Lentils with Potato and Cabbage
Lentils are a great source of plant-based protein and are commonly used in vegetarian and vegan dishes as a meat substitute.

Rinse the lentils and set aside.

In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté for 2 minutes.

Add tomato paste, cumin, turmeric, paprika, salt, and black pepper. Stir well.

Add lentils, potato, cabbage, and vegetable stock. Bring to a boil, then reduce heat and simmer for 25 minutes.

Remove from heat and let it rest for 10 minutes.

Squeeze lemon juice over the dish and garnish with fresh parsley.
